- 3 medium – large ripe tomatoes
- 8 oz fresh mozzarella cheese (solid not shredded). *dairy free cheese may be substituted if needed*
- 1/2 cup fresh basil leaves (dried won’t work)
- 1 pack cherry tomatoes
- 2 tbsp olive oil
- 8 tsp balsamic vinegar
- salt and pepper to taste
- black olives for garnish (optional)
Prepare a small plate for each person or a platter for family style. Slice the tomatoes and mozzarella each in 1/4 inch thick slices.
On a plate, layer the tomatoes, mozzarella, and basil across each other. Add the cherry tomatoes around the arrangement as desired.
Drizzle stacks to preference with olive oil and balsamic vinegar, season with salt and pepper. Optional, add a few black olives around the plate for extra taste and garnish.
