Gluten free spiced pumpkin bread (bread machine)









3 large eggs, well beaten
1/3 cup sunflower oil
1 tsp. pure vanilla extract
1 cup canned pumpkin puree
2 cups gluten free all purpose flour (King Arthur has an excellent mix)
3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. xanthan gum
1/2 cup morena pure cane sugar
1/2 tsp. salt
1 tsp. ground flax seeds
1 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground allspice
1/8 tsp. ground nutmeg
1/8 tsp. ground cloves

When bread machine beep sounds, add: (or appropriate pause on your machine)

1/3 cup raisins rehydrated in water, drained
1/4 cup chopped walnuts

Add items in the order according to your bread machine directions. Typically it will be in order as listed. While processing, add some water to the raisins to rehydrate. Drain before adding the raisins to the mix at the appropriate time.
Once baking is complete, remove from loaf pan and cool on wire rack, or as long as you can stand to wait to slice a piece off to taste!
