During the summer, fresh veggies are just too good to pass up. One of my fav salads during summertime is a Greek Salad. The sweetness of the grape tomatoes mixed with the saltiness of the kalamata olives makes the dish ever so refreshing. And its all gluten free (check dressing to make sure).
Ingredients:
1 c chopped romaine lettuce (washed and rinsed)
1 sliced and chopped red onion (use as little or much to taste)
½ chopped green pepper
½ chopped red pepper
½ sliced cucumber
½ c sliced grape tomatoes
1 jar pitted kalamata olives (black olives don’t give the same taste)
1 container Feta cheese (Athenos comes in a handy shaker)
1 bottle Greek dressing (Ken’s is gluten free)
dash fresh ground black pepper
Instructions:
In a medium sized bowl, combine lettuce, onion, green and red pepper, cucumber, tomatoes. Add several kalamata olives and a sprinkle of Feta cheese. Toss to an even consistency and distribution of veggies. Add Greek dressing to taste. Serve in a bowl with a dash of fresh ground pepper
